Crunch Pies with Cadbury® Dairy Milk Buttons

112 g butter
70 g light brown sugar
40 g caster sugar
2 eggs
120 g oats
40 g Cadbury Dairy Milk Buttons, chopped
70 g plain flour
3 g salt
0.5 tbsp baking powder
Filling:
400 g caster sugar
220 g Light brown sugar
32 g milk powder
5 g corn flour
4 g salt
350 g brown butter (allowed to cool slightly)
2 tsp vanilla extract
12 egg yolks
150 g Cadbury Dairy Milk Buttons
Heat oven to 180 degrees C.
For the crust, mix the butter, light brownand caster sugar until combined. Add the egg, mix and add the oats, flour, salt and baking powder. Mix gently but thoroughly. Add the chopped CadburyDairy Milk buttons and mix again.
Tip the mixture into a greased 12" x 9" baking tray and spread out evenly with a spatula. Bake for 20mins then leave to cool.
In a stand mixer, mix the sugar, milk powder, salt and corn flour. Whisk in the melted brown butter, vanilla, egg yolks, mix gently until smooth. You're trying to avoid adding too much air.
Crush the Cadbury Dairy Milk buttons and sprinkle over the pre-cooked base of the bake. Then pour over the filling and spread evenly to the sides. Bake for around 25mins until the filling still has a slight wobble.
Place the tray in the freezer to cool completely. Then transfer to the fridge overnight.
Once fully set, portion it into 16 squares.
