Jalapeño Pancakes with Philadelphia®

Fluffy savoury pancakes packed with jalapeños, cheddar and pockets of creamy Philadelphia. A bold and flavourful dish with a perfect balance of spice and richness. Recipe to be enjoyed as part of a healthy, active lifestyle.

200 g self raising flour

6 g baking powder

15 g caster sugar

4 g salt

3 large eggs, beaten

25 g melted brown butter

200 g milk

150 g Philadelphia Original

50 g jalapeños, chopped

100 g cheddar, grated

Mix the dry ingredients together (flour, baking powder, sugar and salt), mix in the beaten eggs & milk and finally mix in the melted butter. Don't over mix, keep it light and loose.

Gently fold in the jalapeñoscheddar and Philadelphia. Season with a little black pepper. Mix gently - you want to have little pockets of the cream cheese.

Cook the pancakes on a plancha or in a non-stick pan with a drizzle of oil.

An optional final step would be to top the pancakes with crispy streaky bacon, and a spoon of the sriracha maple butter.
